橄榄油拌四川凉面

炎热将至,但是对无辣不欢的四川人来说,抚平燥热,还是需要用一碗清爽麻辣的凉面,来以毒攻毒。其实四川凉面做法也是极为简单的,加上橄榄油,为这道菜增添一份营养和清爽。

橄榄油拌四川凉面做法

  1. 准备工作。豆芽洗净烫熟,黄瓜洗净切丝香菜葱蒜洗净切末,凉开水备用(过面用);
  2. 锅内放油,烧7成熟,加入花生米炒至刚刚变黄后装盘,晾凉后放入保鲜袋用擀面杖压碎;
  3. 取一无水的碗,放辣椒粉、胡椒粉和盐后混合,最后倒入两勺西班牙橄榄油。
  4. 锅里剩下的炒花生米的油,烧热后放入花椒、八角、香叶、小茴香、桂皮,小火爆香;
  5. 锅内烧水,水开后下面,期间点3次凉水,煮至面条8-9成熟后,捞出过凉水;
  6. 过凉水的面捞入碗里,放入西班牙橄榄油拌开,小心粘住,再放入辣椒油,拌入准备好的调料和菜,拌匀,就可以吃了!
