杏鲍菇味道鲜美,很适合做成凉拌菜。这里要教大家用橄榄油来凉拌手撕杏鲍菇,手撕菜比刀切更有营养,因为蔬菜中丰富的维生素C是非常容易损失的营养素,在切菜的时候,金属的刀面就与细胞中的维生素C直接“碰了面”。这样一来,金属就会加速维生素C的氧化,破坏其活性。所以,手撕菜更能保护营养素。

凉拌手撕杏鲍菇做法

  1. 杏鲍菇洗净,放入碗内蒸一下,筷子能轻松插过即可。
  2. 大蒜、生姜切末,喜欢吃辣的小米椒可以斜着切小段。
  3. 杏鲍菇冷却一下后,用手撕成条状,挤一下水分。
  4. 放入适量生抽,鸡粉,糖,稍微搅拌一下。
  5. 小火,锅内倒点西班牙橄榄油,放入蒜末生姜末、小米辣等,炒香即可淋到拌匀的杏鲍菇丝上。
  6. 撒点葱花,就可以摆盘上桌啦。
