糖醋咕噜肉是广东区域特征传统名菜之一，也称为“古老肉”，肉块外裹着一层糖醋芡，薄薄一层脆皮咬下去后带着肉的口感，香脆微辣，略带酸甜，开胃可口，无论大人小孩都无法抗拒，而且也是很多外国人十分喜爱的中国菜。其实咕噜肉做起来也快速简便，用橄榄油来炸猪里脊不油不腻，让你食欲大动。

以下的食谱是糖醋咕噜肉中比较经典的做法，用番茄酱代替酸味，你也可以在食谱中加入菠萝块一起翻炒，就变成了一道酸甜可口的菠萝古老肉。

糖醋咕噜肉做法

  1. 新鲜里脊肉切成长条。用盐，料酒把肉腌入味，再裹上蛋清和淀粉。
  2. 锅内倒入西班牙橄榄油，等待油6成熟后，放入肉块炸至五成熟出沥干。
  3. 锅留底油爆香蒜和辣椒，加葱，番茄酱炒匀。
  4. 倒入倒入肉片拌炒，放醋，勾芡，装盘。
